Simply Seared Scallops

Instructions

  1. Heat a tablespoon each of olive oil and butter in a skillet over medium heat until the mixture begins to bubble.
  2. Add scallops, seasoned with salt and pepper, in a single layer
  3. Cook for about 2 minutes on each side until they're firm and nicely browned
  4. Serve over a bed of rice and vegetables.
