Taco Soup

Ingredients

  • 1 lb hamburger browned and drained
  • 2 cups chopped celery
  • 2 cups carrots
  • 2 cans cream of potato soup
  • 1 can beef stock
  • 1/2 pkg mild taco seasoning
  • 1 large can kidney beans
  • 1 small can tomato sauce
  • 1 quart tomatoes

Instructions

  1. Combine all above ingredients.

  2. Simmer on low for 2 hours. Serve hot with grated Monterey Jack or Mozzarella cheese sprinkled on top.

  3. Sprinkle crushed plain Doritos on the cheese, or top with a dollup of sour cream and a few finely chopped green onions.
