Basil Vinaigrette

Ingredients

  • 3 TB white wine vinegar
  • 2 tsp Dijon-style mustard
  • 1 garlic clove (if desired)
  • 1/2 - 3/4 cup olive oil or to taste
  • 2 TB minced fresh basil leaves

Instructions

  1. In a bowl combine the vinegar, the mustard, garlic, salt and pepper to taste

  2. Add the oil in a stream, beating

  3. Beat the dressing until it is emulsified.
