Pasta Salad with Salsa

Ingredients

  • 2 28 oz cans diced tomatoes
  • 2 jalapenos diced

Add to pureed items

  • 1 tsp salt
  • 2 TB vinegar
  • a little garlic powder
  • green onions, optional

Pasta

  • 1 pkg pasta

Instructions

  1. Combine with oil, lime juice, chili powder, cumin, salt and garlic.

Pasta

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Toss the pasta with the pureed mixture and set to cool to room temperature, stirring occasionally.

  1. Sir in mango salsa

  2. Stir in the avocado or just garnish the top with it.
