Aruglua Salad with Marinated Beets and Goat Cheese

Ingredients

  • 1 lb beets boiled and peeled - slice or dice according to preerence
  • 2 TB Balsamic vinegar high quality
  • 1 tsp Dijon mustard
  • 1/2 tsp dried thyme or 1 tsp fresh
  • 1 shallot, minced cut in half and then peel (will make it easy to peel)
  • 1/4 cup virgin oil
  • salt and pepper to taste

Instructions

  1. Combine vinegar, mustard, shallot and thyme.  Blend well.  Slowly whisk in olive oil until well emulsified.  Season to taste with salt and pepper.

  2. Combine dressing with beets and let soak for at least 2 hours but overnight is better.

  3. Let this dish come to room temperature before serving.
