Easy Pumpkin Cake

Servings 12 servings

Ingredients

  • 1 pkg (18.5 oz) spice cake mix
  • 3/4 cup canned pumpkin
  • 2 eggs
  • 3/4 cup water
  • 1/2 cup chopped nuts

Pumpkin Frosting

  • 2 TB butter or margarine
  • 2 cups powdered sugar
  • dash salt
  • 1/4 cup canned pumpkin

Instructions

  1. Preheat oven to 350 degrees.

  2. Grease and flour a 13 x 9 x 2 inch baking pan.

  3. In large bowl of electric mixer, combine cake mix, pumpkin, eggs, and water.

  4. Beat at medium speed for 4 minutes.

  5. Stir in nuts.

  6. Pour into prepared pan and bake for 35 to 40 minutes.

Frosting

  1. In small bowl, use an electric mixer to cream butter with sugar and salt.

  2. Gradually add pumpkin, beating until frosting is smooth and of spreading consistency.

  3. Makes enough frosting for a 13 x 9 x 2 inch cake.
