Lentil Soup

Ingredients

  • 2 cups lentils
  • 8 cups water
  • 1 medium onion, cut in half
  • 1/2 cup chopped celery
  • 1 bay leaf
  • 3 TB chopped parsley
  • pinch allspice
  • 1 clove diced garlic
  • pinch thyme
  • salt and pepper to taste
  • 2 cups diced potatoes potatoes
  • 1/2 lb brotwurst, turkey sausage, hot dogs in rounds (optional)

Instructions

  1. Wash and drain lentils in cold water.

  2. Place in pot with cold water, gradually bringing almost to boil.

  3. Add remaining ingredients (except potatoes and sausage)

  4. Cover and simmer slowly for about 2 hours.

  5. Add potatoes and meat and simmer 1/2 hour more.
