Nutty Apple Salad

This light and crunchy salad is full of fruit and nuts, and appeals to both kids and adults. It keeps well for up to two days, and because it doesn't get soggy, it's perfect to pack in a lunch box.

Servings 4

Ingredients

  • 6 firm apples, such as Gala or Golden Delicious peeled, cored, and sliced
  • 1 TB freshly squeezed lemon juice
  • 2 kiwis peeled and diced
  • 1/2 cup sliced strawberries
  • 1/2 cup packaged shredded coleslaw mix, without dressing
  • 1/2 cup walnut halves
  • 1/4 cup slivered almonds
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 TB sesame seeds, plus more for garnish (optional)
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. In a medium bowl, toss the apple slices with the lemon juice to prevent browning.

  2. Add the kiwis, strawberries, coleslaw mix, walnuts and almonds and toss well to mix.

  3. In a small bowl, whish together the balsamic vinegar, olive oil, and sesame seeds and season with salt and pepper.

  4. Pour the dressing over the salad and toss to coat.

  5. To serve, spoon into small bowls and top with additional sesame seeds if desired.
