Basil Pesto Chicken

Ingredients

• 1 large chicken breast or chicken strips

Pesto Sauce

• 4 cups fresh basil
• 1 lemon, zest (grate) the peel and put in, then juice the lemon and add to mixture
• 1/4 cup olive oil, drizzle until leaves are wet - drizzle more if needed until leaves are combined
• 1/4 cup water
• 1/4 cup pistachios, could use more if desired
• 1/4 cup grated parmesan cheese, could use more if desired
• salt, small amount
• 1/4 tsp pepper
