Ingredients: 3 TB white wine vinegar; 2 tsp Dijon-style mustard; 1 garlic clove (if desired); 1/2 - 3/4 cup olive oil or to taste; 2 TB minced fresh basil leaves

3 TB white wine vinegar
2 tsp Dijon-style mustard
1 garlic clove (if desired)
1/2 - 3/4 cup olive oil or to taste
2 TB minced fresh basil leaves

Method

In a bowl combine the vinegar, the mustard, garlic, salt and pepper to taste
Add the oil in a stream, beating
Beat the dressing until it is emulsified.
