Summer Squash Curry

Ingredients

  • 3 TB oil
  • 1 large onion chopped
  • 1 TB Picante
  • 2 medium potatoes diced
  • 1 tsp salt
  • 1/2 tsp tumeric
  • a little curry powder
  • 4 cups 1/2 inch diced zucchini or yellow quash.
  • 1 large tomato chopped or 1/2 cup stewed tomatoes

Instructions

  1. Mince together and stir fry in 3 TB oil until transparent, onion and picante.

  2. Add potatoes and stir fry 5 minutes until half done.

  3. Add salt, tumeric and curry powder. Mix well.

  4. Add squash. Stir 5-10 minutes.

  5. Add tomato Mix.

  6. Cover and simmer 5-10 minutes or until squash is done.

  7. Mix occasionally.

  8. Good hot or cold.
