Basil Pesto Chicken

Servings 4 people

Ingredients

  • 1 large chicken breast or chicken strips

Pesto Sauce

  • 4 cups fresh basil
  • 1 lemon zest (grate) the peel and put in, then juice the lemon and add to mixture
  • 1/4 cup olive oil drizzle until leaves are wet - drizzle more if needed until leaves are combined
  • 1/4 cup water
  • 1/4 cup pistachios could use more if desired
  • 1/4 cup grated parmesan cheese could use more if desired
  • salt small amount
  • 1/4 tsp pepper

Instructions

Basil Pesto Sauce

Mix in Blender

  1. Basil, oil, water if needed. lemon zest and juice

  2. Once blended, add pistachios and blend

  3. Add parmesan, salt, peppe and blend

Chicken

  1. Cook chicken as desired. Favorite way is brown in pan on both sides and cook until no longer red.

Recipe Notes

Can substitute kale or mint for the basil.
