Chicken Cheese Soup

Ingredients

  • 4 chicken breasts Cover with water and cook until tender. Save broth.
  • 3 diced potatoes
  • 3 diced carrots
  • 3 diced celery stocks
  • 1 diced onion
  • 1 pkg frozen broccoli

Instructions

  1. Cover all vegetables except broccoli with water and cook until tender.

  2. Add broccoli the last 5 minutes.

  3. Remove from heat and drain, saving the liquid.

  4. Combine chicken broth, water from the vegetables. Add enough chicken broth to cover. Heat to boiling.

  5. Melt 1 1/2 cups butter and add 1 1/2 cups flour. Add to the above liquid.

  6. Stir until thick. Add 1 cup of cheese (or more depending on taste), vegetables, cut up chicken and 1 pkg frozen peas.
