Fruited Chicken Salad

A satisfying blend of savory and sweet, creamy and crunchy, this lunch dish is a quick way to use up leftover cooked chicken breast. Serve on bread or toast for a traditional sandwich, or spoon into an avocado half for a delicious salad.

Ingredients

  • 2 cups chopped cooked chicken breast
  • 2 Granny Smith apples, peeled, cored, and diced
  • 1/2 cup dried cranberries
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 2 TB honey Dijon mustard
  • 1 TB olive oil mayonnaise
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. In a medium bowl, combine the chicken, apples, cranberries, onion, and celery and mix well.

  2. In a small bowl, combine the mustard, mayonnaise, salt and pepper and whisk together until well-blended.

  3. Sit the dressing into the chicken mixture until thoroughly combined.
