Jessie Evans Smith's 90 Minute Bread - White or Whole Wheat

Ingredients

  • 4 cups warm water
  • 4 tsp salt
  • 8 TB sugar or honey
  • 4 TB melted shortening
  • 4 yeast cakes dissolved in 1 c of warm water (above)
  • 7-8 cups flour

Instructions

  1. Dissolve yeast in one of the cups of water.

  2. Mix rest of ingredients.

  3. Mix into a soft but not sticky dough.

  4. Cut into 4 pieces and let stand 15 minutes.

  5. Using the handle of a butcher knife or heavy mallet-like instrument, pound each piece of dough for 1 minute.

  6. Form into four loaves and put each loaf into a greased break pan.

  7. Let stand for 30 minutes.

  8. Baker for 30 min. at 400 degrees.
