Layered Chicken Curry Salad

Ingredients

  • 6 cup shredded lettuce
  • 1/4 lb bean sprouts, blanched
  • 1 cup water chestnuts, sliced
  • 1/2 cup green onion, thinly sliced
  • 1 cucumber thinly sliced
  • 3 cups cooked chicken, shredded
  • 1/2 cupc macadamia nuts, chopped
  • 12 cherry tomatoes

Instructions

  1. Layer in 4 qt pan. Spread lettuce evenly on bottom. Layer bean sprouts, water chestnuts, green onion, cuke, and top with chicken. Cover chicken with pea pods. Spread mayonnaise mixture and refrigerate overnight. Garnish with nuts and tomato halves.

Mayonnaise Mixture

  1. Mix well until blended:

    2 c mayonnaise

    2 tsp curry powder

    1 tsp sugar

    1/2 tsp ground ginger
