Pastel Divinity

Ingredients

  • 1 1/2 cup sugar
  • 3/8 cup light corn syrup
  • 3/8 cup water
  • 1 egg white
  • 1/2 pkg red, green, white jello for color
  • 1/2 cup chopped nuts
  • 1/2 tsp vanilla

Instructions

  1. Combine sugar, syrup and water until sugar is dissolved.

  2. Bring to boil and cook to form a hard ball or 250 degree F

  3. Beat egg white until it fluffs up. Add the dry jello to it.

  4. Gradually beat until mixture holds a definite peak.

  5. Pour syrup over egg whites in a very fine stream, beating constantly until candy holds shape and loses gloss.

  6. Fold in nuts.

  7. Pour into an 8" pan or drop on to wax paper.
