Portugese Bean Soup

Ingredients

  • 1 cup canned or fresh tomatoes
  • 1/3 cup tomato paste
  • 1 medium potato, cubed
  • 1 medium sweet potato, cubed
  • 1/2 cup diced onion
  • 1 medium carrot, diced
  • 3 cups finely shredded cabbage
  • 1 can kidney or pinto beans
  • 1/2 of 3 ounce Portugese Sausage, diced.
  • 4 cups water

Instructions

  1. Simmer tomatoes, tomato paste, potatoes, onion, carrot, cabbage, beans in water for 10 minutes.

  2. Add sausage and simmer for 2 hours.
