Tuna Salad

Ingredients

  • 1 can Tuna
  • 2 T green onions finely chopped
  • 2 TB pickle relish Grillos's Pickle de Gallo (Whole Foods)
  • 2 TB capers slightly rinsed and drained, fry in a little oil in pan until toasted. use in place of pickle relish
  • ½ red bell pepper chopped (or any other of choice)
  • 4 medium radishes, chopped finely
  • ¼ cup celery chopped finely
  • ½ cup chopped mint or other favorite herb
  • 1/2 tsp paprika, tumeric, mushroom powder, garlic powder
  • 1 dash cayenne pepper
  • salt and pepper to taste
  • 1 boiled egg optional
  • ¼ cup mayonnaise
  • 1 TB Dijon mustard
  • 2 TB slivered almonds pan roasted or pistachio, pumpkin seeds (can mix in or sprinkle on top) good roasted over low heat before adding

Instructions

  1. Add all ingredients in order, mixing as you go.

Recipe Notes

Serve as a sandwich on bread of choice or wrap.

Serve as a lettuce wrap.

Serve on lettuce leaves or salad greens.  

Serve with thin rice cakes.

Compliment with sliced cucumbers, pickle spears (Grillo's)
