Turkey Tacos

Ingredients

  • 2 lbs ground turkey

Vegetables and spices to add to turkey

  • avocado oil or any oil of choice
  • 1 large red onion, chopped fine any onion is fine
  • 2 cups portabello mushrooms, chopped fine other mushrooms are fine
  • 1 cup colored peppers, chopped fine
  • 6-8 cloves garlic, finely chopped or to taste

Spices

  • 1 1/2 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp garlic powder, onion powder, minced onions
  • 1/2 tsp dried or fresh oregano

Instructions

Turkey

  1. Put turkey in a bowl of some lukewarm water. Mix the turkey into the water with hands until smooth and all the turkey chunks are gone. (see picture)

  2. Lightly cover bottom of pan with oil, add chopped onions and cook until soft.

  3. Add chopped mushrooms. Cook until soft.

  4. Add peppers. Cook until soft.

  5. Make a well in the middle of the vegetables. Add some oil until heated. Add the garlic and cook until soft (not burnt). Mix in with the other vegetables.

Add following spices

  1. cumin, coriander, paprika, garlic powder, onion powder, dried oregano, minced onion, mushroom powder

  2. When everything is cooked, taste for adjusting flavor.

  3. Add all the spices to the turkey in the bowl. Then add to the pan with all the other cooked ingredients. Stir. Add the all the spices again. When turkey is cooked through, taste for adjusting flavor.
